Charlie OliverHey friends! I’ve got something important to talk about today! I spent 39 hours researching and testing 14 different types of pizza peel and found that material, variety of sizes, and style were most important.

Eventually, I found something that would suit my needs but it occurred to me that I wasn’t the only one who might be having the same problems I did. What I would like you to remember as you browse my website is that I don’t work in the industry so the reviews I have are based on good old fashioned honesty.

Pizzacraft 14” Wood Pizza Peel

This solid wooden peel was comfortable to hold and easy to use right out of the box. It did a very good job of unloading dough, though it sometimes misshaped pizza slightly if we shook the handle too vigorously. Because it was so thick, however, it wasn’t great at rotating half-baked dough or removing the finished product without an assist from tongs.

EXO “Big 16” 16-Inch Aluminum Super Peel

Like its older sibling, this aluminum-bladed Super Peel had a bit of a learning curve but was great at unloading dough and removing the finished product. Unfortunately, its larger size made it unwieldy and awkward to maneuver around the tight quarters of the oven for midbake rotations. And its conveyor belt was designed slightly differently than our winner’s, forming a loop that seemed a little too big for the blade, slipping off the edges of the peel and needing frequent adjustment.

How pizza ovens work

The classic pizza oven shape, sometimes called an igloo, has an arched front opening and an igloo-like dome. The shape serves a vital function.

I then use a BBQ Dragon which is like a battery operated hairdrier with a long flexible handle and a sturdy clip. It really gets the logs moving in a hurry. Neither gadget is necessary, I use them because they are sure-fire and get thigs hot in a hurry.

Oven and kit suppliers

Alfa Pizza. Alfa Pizza began making heavy, traditional refractory pizza ovens in 197In 200they introduced their popular Minuti metal oven. Metal pizza ovens heat up faster than heavy brick and cast refractory ovens, but they cool off faster as well. They are also much lighter and may be moved around a patio or balcony with ease. Alfa now offers a variety of ovens and related accessories for residential and commercial use. Sold in Italy with limited availability in the USA.

Beech Ovens. Established in Brisbane, Australia in 1958, Beech is now owned by the Middleby Corporation, a global giant in commercial cooking and processing equipment. They manufacture big, commercial cookers in a variety of designs. Product range has expanded from their original Stone Hearth Oven, to include Rotisseries, Tandoors, Duck Ovens, Char Grills, Specialty Grills and Bread Ovens.

Earthstone Ovens. Earthstone was founded in 198by Maurice Sabbagh Yotnegparian, a car mechanic who relocated from France to California in the 1950s. An avid cook, Yotnegparian found time to explore culinary pleasures while pursuing his craft restoring luxury cars in the Los Angeles area. He began importing and selling ovens from France to west coast clients. The initial success led him to design and build his own ovens. Today Earthstone produces a large selection of residential and commercial ovens and accessories. Their most popular residential model is the 90-PA Wood Fired Oven.

Fontana Outdoor Ovens. Fontana Forni metal ovens are made in Italy, but relatively easy to find in the USA. Metal pizza ovens heat up and cool off faster than heavy brick and cast refractory ovens. They are comparatively light weight and easier to move around a patio or balcony. Fontana Forni offers some unique features, such as integrated convection fans and interior lights, not commonly found on most backyard pizza ovens. Two of their popular residential ovens are the Small-Est and Toscano Margherita.

Kalamazoo. Known for superb high end custom made grills, Kalamazoo also makes wood fired pizza ovens.

Los Angeles Oven Works. Made in Italy with modern refractory materials, Los Angeles Oven Works is known for great performance and engineered for easy installation. They produce a wide variety of modular and pre-assembled models for home or commercial use.

Pavesi Outdoor Ovens. Modular oven built in Modena, Italy. Can be purchased as a kit or in a pre-fabricated form.

Stonehouse Pottery. Stone house creates German Kachelofen: beautiful clay stoves that burn wood efficiently and produce clean, long lasting radiant heat. The heat is stored in the Kachel (clay brick). As the Kachelofen is made of clay bricks, the design possibilities are endless. Stone house takes pride in making each custom Kachelofen a work of art.

Tuscany Fire. Based out of Connecticut, Tuscany Fire is the exclusive, authorized North American distributor for Di Fiore wood fired ovens from Italy. They offer a very large selection of residential and commercial ovens.

Uuni. This small modestly priced oven is portable, it burns wood pellets, and it is very cool looking.

Wood Stone. Wood Stone Corporation, based in Bellingham, Washington, has been manufacturing stone hearth and specialty commercial cooking equipment for the foodservice industry since 1990. Their 117,000 square foot research and manufacturing facility is tasked to keep Wood Stone at the forefront of design and construction technology. Although the bulk of their business is large commercial equipment, they have a division called Wood Stone Home that offers some residential models.

Pizza Peels

One of the oldest tools in the bakers’ armory is a peel. It’s essentially a flat shovel used to safely retrieve  bread, pizza, and pastries out of extremely hot ovens. In terms of pizza, a good peel will allow you to keep a nice, crisp crust without burning—you, or the pizza.

Obviously you appreciate quality if you’re using the Big Green Egg, so match it with the best accessories. The ‘pros’ use a long one (nearly three feet), but unless you have a flare for the dramatics, you’re probably in the market for something a bit smaller. No judgement if you really want to take a pizza off your personal grill from three feet away, but if that’s your goal, this list may not be so useful.

Use a spatula to scrape off any excess foods or debris

Pizza Screens

The first thing you notice when you look at the Blackstone Pizza Oven is that it is quite similar looking to a standard patio grill. It has quite tall legs with wheels for some portability, two side shelves, a bottom shelf for the gas bottle and a main cooking area with a thermometer. So far things seem fairly standard.

Where the Blackstone gets really interesting is what’s under the hood of the main cooking area. The stand-out feature is the 1inch rotating pizza tray. This works through a small motor that is powered by D batteries or a direct connection to the mains. It slowly rotates the pizza tray, and pizza, to ensure very even cooking. We’ve never seen anything like this on such a cheap commercial product before and can safely say that it works very well. It helps take away any worry of over cooking one side of your pizza. There is even a second pizza stone on the roof of the oven to reflect heat back down onto the top of the pizza to ensure the top is cooked as well as the bottom.

The main unit of the Blackstone is made very well. It has a nice stainless steel front plate and the insides are made of a mixture of high quality materials that manage to contain the heat from the burner very well. A removable front door/lid would have been nice, but it does maintain temperatures consistently.

There are a couple of issues people are reporting though. The first one being trouble with the rotating tray system. Since it’s a moving part there’s likely to be misalignment issues and general breakages. The other main problem is the push button igniter. This just stopped working for us, we changed the battery, took it apart, but in the end, we just use a normal lighter. Not a problem but a little disappointing.

But there are some problems. The construction issues and lacking quality might be enough to put you off. If Blackstone can update this model with a few fixes then this would be an absolute no-brainer. But as it stands we still think that it’s worth a purchase as the pros majorly outweigh the cons.

You simply can’t use a pizza oven with having to use some accessories. Imagine trying to put a raw pizza into an oven without a pizza peel. It’s just not going to happen. In this quick guide, we’ll take you through some of the most essential pizza oven accessories and a few that will just make your life easier.

Pizza Oven Brush 

If you have a larger pizza oven then a pizza oven brush is a requirement for cleaning up ash after the fire has gone out. A good quality wire brush with a long handle is ideal for such a task. You could use a normal brush and hope the ashes are cool enough not to burn it, but a proper wire brush will always be a better option.

What it can also do is allow you to move the hot woods around the oven when it is still lit. This allow a much greater control over the cooking space and heat distribution in the oven.

Pizza Wheel 

A good quality pizza wheel is a necessity when it comes to producing great pizza. If you’ve just got your pizza out of your wood-fired oven the easiest way to get it ready for eating is to use a pizza wheel.

Quick tip: Don’t push forward with your pizza wheel, instead start at the furthest point on the pizza away from you and drag the pizza wheel back towards you. With a little practice, you’ll find it a whole lot easier and quicker to cut your pizza into perfect slices.

Whilst not essential, a good pair of heat resistant gloves are one of the best pizza oven accessories you can buy. If you have to move your pizza oven whilst it’s still hot, or even just want to protect your hands when lighting the fire, a quality pair of heat resistant gloves can save you a lot of potential pain. It also makes moving the wood in the oven much simpler and easier.

Pizza Oven Cover

If you’ve got a portable or built in pizza oven the worst thing to do is allow the weather to get to it. There is a high chance that, if you’ve got a real brick oven, that it will crack. This is a normal process and you shouldn’t worry about it, but you should worry about the weather getting into the cracks. If water gets into one of the cracks and then freezes, the crack is going to expand and the integrity of the oven will be compromised.  If you have a metal oven then there is a chance that the weather could rust it. Whatever you have, it is highly recommended to keep it under a cover of some sort.

The pizza oven cover will be dependent on which pizza oven you own and generally the manufacturer of the smoker will make a cover for their smoker as well. There are third party covers available as well, some of which are better.

To get a good one you need to be looking out for a quality, heavy duty cover that is ideally made from some form of polyester material that will not fade and is water proof.

My first option in terms of the pizza peel material is wood. Wood is the best material to prevent sticking of raw pizza dough to the peel itself. This is essential if you don’t want to disturb your carefully assembled pizza toppings. Your beloved toppings on the floor of your pizza oven or grill – not fun. In addition, wooden pizza peel provides rustic appeal. Let’s admit it, they do look pretty! That’s why most people prefer a wood pizza peel because it exudes a more natural and appealing appearance than its metal counterpart. Moreover, they could also last in time if used, stored, and maintained well.

So, if you can, we are particularly interested in the measurement from the front of your oven structure, across any bench space or flue cavity and through the oven itself to the inside back wall. Knowing this will allow us to make your handles the perfect length for your particular set up.


Similarly, if you are getting a pizza shovel (whatever shape!) knowing the  measurement across the narrowest part of your oven opening (be it the door space or the flue cavity), will help us ensure that your peel face is exactly the right width for you.

Oven Tools Care Tips

These fire tools and wood fired oven accessories are made from high quality food grade stainless steel. They are tough as nails and can be left outside in all weather. The only thing you need to do is to oil the handles occasionally (i.e., once or twice a year) to maintain the timber colour.

The tools can be washed just like any other kitchen item, but usually a wipe over with a damp cloth will suffice.

If your one of those people who like to be able to see your face reflected in the stainless surface, the occasional polish with one of the commercial stainless steel products or a stiff paste of bi-carb and water, will bring it back to a nice, shiny finish.

Next time you order pizza, tell them not to slice it. The liquid running down through the cuts only softens the crust. A good pizza wheel will keep your pizza crispy, and it comes in handy for home made pizza and even for cutting pie dough. You want a big wheel like this one. It has a a solid riveted axle to keep it from wobbling, a good hand guard, and the Oxo’s signature comfy grip.

Wooden Pizza Peel Like The Pros Use

The pizza peel or paddle is the best way to get your pie in and out of the grill. You dust the top with flour or corn meal, which acts like ball bearings and adds nice flavor and texture. Then you spread the dough on the peel, top it, and slide it onto the pan or stone on the grill. It is important to not let the wet dough sit on the flour on the peel too long when you dress the pie or else the flour will get wet and glue the dough to the pdeel. That’s why I prefer corn meal. It doesn’t get wet easily and makes bigger ball bearings. You then use the peel to remove it. They come in all sorts of sizes and prices, metal and wood. I prefer wood for inserting the pie, and metal for turning the pie. Wet dough tends to stick to metal and makes it a little harder to slide off.

I don’t know how I lived without a good, accurate digital kitchen scale for so many years. It is so important. Look at salt for example. cup of table salt has almost twice as much salinity as a cup of Morton’s kosher salt because Morton’s kosher salt has more air space between the grains. But a pound of all salts contain exactly the same amount of sodium chloride. Without a scale, making a brine requires a calculator.

My favorite scale is from OXO. It can weight accurately up to 1pounds as well as fractions of an ounce. Push a button and it converts to metric. Put the bowl on the scale and push a button and it zeros out so the bowl’s weight is not included. The top comes off for easy cleaning. It will change your life.

An IR thermometer is a biiiig help

When it comes to pizza, the temperature of the cooking surface is just as important as the air temp because that is what cooks the dough. The best way to measure the temp of your pizza stone or pan is with an infrared gun.

I keep a cooking diary. In it I write down vital info about every cook so I can learn what works and what doesn’t. OK. So I’m anal. But being anal got me this gig. The two most important variables to track in any cook are time and temp. So I used to wear a stopwatch around my neck when I cooked. Click when I fire up. Click when it is up to temp. Click when the meat goes on. Click when I add more wood or charcoal. Click when I turn. Click when I sauce. Click when I take it off. But have you seen the new digital stopwatches? They are a real pain with faaaar too many features and bells and whistles. My last one sat in my desk between cooks and beeped every hour and the only way I could make it shut up was with a hammer. True story. Now I use the very simple user friendly Timestick.

It can count down or up and when a count down alarm sounds, the count up timer starts so you can see how much time has elapsed since your alarm. It’s range is 9hours 9minutes and 9seconds, there is a keypad lock so you don’t accidentally screw things up, there’s a lanyard so you can wear it around your neck, it comes in nine colors, it’s splash proof, and it has a magnet on back so I can stick it to my grill, fridge, or oven. Operates between 3and 104°F. Best of all, you won’t need to read the manual. Love it.

Thermoworks Extra Big & Loud Timer

If you prefer a bigger timer that can stand on the counter as well as stick to the fridge, with a keyhole mount on the back so you can mount it on a wall, and an alarm that you can hear in a noisy commercial kitchen or when you are downstairs doing laundry at home, this is the 1decibel choice. Thank goodness you can adjust the volume. Other than that, it has pretty much the same features as the Thermoworks Timestick (above).

Pizza attachments for your grill

There are several accessories that can be attached to charcoal and gas grills. I have testing many. I am unimpressed. My advice is get a good stone, an infrared thermometer to read the stone’s temp, and practice until you can get the air temp hot tenough to cook the top, and the stone temp cool enough that it darkens, even chars, the crust, but doesn’t burn it. Design Trifecta 360 Knife Block

Admittedly expensive, this handsome block certainly seemed to live up to its billing as “the last knife block you ever have to buy.” The heaviest model in our testing, this block was ultrastable, and its durable bamboo exterior was a breeze to clean. Well-placed medium-strength magnets made it easy to attach all our knives, and a rotating base gave us quick access to them. One tiny quibble: The blade of our 12-inch slicing knife stuck out a little.

Schmidt Brothers Downtown Block

This roomy block completely sheathed our entire winning knife set using just one of its two sides—and quite securely, thanks to long, medium-strength magnet bars. Heavy, with a grippy base, this block was very stable. An acrylic guard made this model extra-safe but also made it a little trickier to insert knives and to clean; the wood block itself showed some minor cosmetic scratching during use.

Schmidt Brothers Midtown Block

This smaller version of the Downtown Block secured all our knives nicely, though the blade of the slicing knife stuck out a bit. With a base lined with grippy material, this block was very stable. An acrylic guard afforded extra protection against contact with blades but made it a little harder to insert knives and to clean; the wood itself got a little scratched during use.

Last but by no means least is the Pan Hook. It’s not rocket science and it won’t change your life (well not majorly anyway), it just is what it is – a hook for your pans.

It’s a pretty good Pan Hook though, nice and strong – it’s never going to wobble or let go. from the end of the pole, it’s centred on it, so you’ve got a lot more control and don’t need to jerk around trying to lasso your pans from over the top; you can kind of the thing around.

Oh, nearly forgot, the pan hook’s also got a kind of point at the end that means you can put on and take off lids without fear of disaster and even get under those really stupid handles and the matching really stupid lids (and you really don’t want to get me started on stupid lids!) that fall back flat against the pan…

Damp Mop

Also, a bucket is not essential (though, if you’ve come this far…!), because an oven mop is usually only used damp, not dripping; it is quite possible to just spray water on from a spray bottle and/or, if you do need it wet, to squeeze it out with your hands or an old towel.


As well as the standard length of Trowel, it is also relatively common for people with big ovens (particularly those serious aficionado’s who have one of those big, freestanding, rectangular, could-rent-it-out-as-a-spare-room style ovens) or the people who have deep flue chambers on their ovens, to get a Trowel with a longer handle (say up to 90 cm total length?), so that they are still smaller then a shovel and can be kept on the bench, but they have enough reach to get you right in there…


The Coal Scoop is particularly good for domed/curved sided ovens. If your oven is straight sided (or the afore-mentioned extra room style), you are probably better off with an ember rake. The scoop has a bit of an edge over the rake for fire handling I reckon though – you can play fire-hockey with it and bring your fire in and spread it back out really easily…


Similarly, if you are getting a pizza shovel (whatever shape!) knowing the  measurement across the narrowest part of your oven opening (be it the door space or the flue cavity), will help us ensure that your peel face is exactly the right width for you.
